Abstract
In recent years, there has been growing interest in the use of
natural and functional plant ingredients in the production of baby food. The aim of
this study is to evaluate the nutritional value and technological properties of nontraditional
fruits and vegetables - sweet potato (Ipomoea batatas), pumpkin (Cucurbita
spp.), red carrot (Daucus carota var. atrorubens) and sea buckthorn (Hippophae
rhamnoides) - for use in vegetable and fruit purees for young children.
