Abstract

Cutting is defined as a technological process of machining where a material is divided into parts under the pressure of a cutting tool. Shearing is a type of cutting process. Cutting bakery products is a type of dividing materials into pieces, distinguished by its own specific characteristics in the technological process. It consists of dividing the product into parts with predetermined dimensions and quality using a cutting tool.
